Soya Lecithin Soya lecithin is a natural phospholipid emulsifier extracted from soybeans providing powerful surface activity (HLB 4-9), oil-in-water and water-in-oil emulsification, and liposomal dispersion at 0.1-2% usage with heat stability up to 150°C. In the food industry, it delivers excellent emulsion stability, release properties, and conditioning ideal for chocolate, bakery, margarine, and instant products.
